Simple quick & tasty
Note:This made enough for us to have seconds and left overs!
Note 2: I cooked the whole box of bow ties, recipe calls for 3 cups which leaves you with about 2. Save em' and throw some spaghetti sauce in 'em for a quick lunch.
Note3: I had some left over red and green peppers so I added them. We like it spicy. The recipe tastes good with or without them.
3 cups uncooked bow tie pasta
1 pound ground beef
1/4 cup chopped onion
2 cups (8 oz.) shredded cheddar cheese
1 jar (16 oz) salsa
1 can (14 or so oz.) diced tomatoes un drained
1 envelope taco seasoning
2 cups nacho tortilla chips, crushed
1> Cook pasta. In skillet cook beef and onion over med. drain. Add cheese, salsa, tomatoes,and taco seasoning. Drain pasta; stir in beef mix.
2>Transfer to a greased baking dish. Cover or not :) and bake at 350 for 20 mins. Un cover (duh); sprinkle with tortilla chips. Bake 10 mins longer or until heated through.

We made this for dinner last night. It was awesome. We added some black beans and white corn to ours. It turned out great.
