Momma's Day Muffins




Sour Cream Blueberry Muffins

*These require only 5 ingredients (my kind of baking!) Sweet, cheap, quick and delicious!

Yield: 1 dozen

2 cups biscuit/baking mix
¾ cup sugar (plus a little extra to sprinkle on tops)
2 eggs
1 c. (8 oz.) sour cream
1 c. fresh or frozen blueberries~Note: If using frozen blueberries, use without thawing to avoid discoloring the batter.

1 In a large bowl, combine the biscuit mix and ¾ cup sugar.

2 In a small bowl, combine eggs and sour cream; stir into the dry ingredients just until combined.

3 Fold in blueberries.

4 Fill greased muffin cups three- fourths full. Sprinkle with sugar.

5 Bake at 375 for 20-25 mins or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
