Cajun-Chicken sandwich (For two)

*This recipe is made for 2, so if you are cooking for more be sure to increase your ingredients as needed*

INGREDIENTS:

2- Boneless/skinless chicken breasts
3/4 cup - Cornflakes cereal
1/4 cup - Bisquick mix
2 tes - Cajun seasoning
1/4 cup - water
2 tbsp - Butter
2-rolls of your choice
lettuce, tomato, mayonaisse

STEP 1:
Flatten chicken breasts to about 1/4" -- To do this you're going to place both chicken breasts between sheets of wax paper and using a pan or mallet just pound the meat to desired thickness.

STEP 2:
Crush cereal -- I put them in a ziplock and took the rolling pin to them.

STEP 3:
Melt butter in a skillet over medium heat. In a shallow dish stir together cereal, bisquick and seasoning. In another shallow dish place the water. Dip the chicken into the water then into the seasoning mixture and place in the pan. Cook chicken for about 8-10 minutes, only turning once, until no longer pink in the middle



STEP 4:
Add your sandwich fixin's of choice, add the chicken and enjoy!



I served mine with some homemade steak fries and fruit but of course any side dish would work fine!
