Chicken and lemon-Broccoli Alfredo

*For evenings when you need dinner in a rush with a few easy ingredients, try these quick and delicious chicken breast strips with fresh vegetables and a creamy alfredo sauce. The lemon brings the dish together beautifully.

Serves 4
4 small skinless, boneless chicken breast halves or cut into strips
Salt and pepper
1 Tbsp olive oil
1 lg. lemon
2 cups fresh broccoli florets
1 10 oz. container refrigerated Alfredo pasta sauce
(I had some left over angel hair pasta that I threw in this can be made with our without pasta)

1 Season chicken with salt and pepper. In skillet brown chicken in hot oil turning half way.

2 Meanwhile, shred 2 tsp. lemon peel; set aside. Slice lemon. Add broccoli and lemon slices to skillet. Cover and cook 8 mins until chicken is done.

3 Add Alfredo sauce to skillet 1-2 mins until heated. Add lemon peel and pepper. Toss.
