Here’s a quick and delicious meal that’ll please the entire family. Best part, it will only take you 20 minutes! If you haven’t tried plum sauce it is a sweet sauce, similar to sweet and sour.
Serves 4-5
4- 10 “ flour tortillas
1 tsp. toasted sesame oil
12 oz. lean boneless pork, cut into strips
2 cups loose packed frozen stir fry vegetables (any combo.)
¼ cup bottled plum sauce ( can be found in the Asian food aisle)
( I added white rice to ours)
1 Pre heat oven to 350. Wrap tortillas in foil. Heat in pre heated oven for 10 mins to heat/soften. (This can be done in the microwave but wrapped in paper towels rather than foil for 30seconds)
2 In a skillet heat sesame oil over medium high heat. Add pork strips; stir fry for 3-4 mins or until done. Add vegetables. Cook and stir for 4-5 mins until vegetables are crisp and tender. ( I added white rice to mine)
3 Spread each tortilla with 1 Tbsp. of plum sauce; place a quarter of the meat mixture just below the center of each tortilla. Fold the bottom edge of each tortilla up and over the filling. Fold in the side; roll up over filling.
