A Sunday sandwich

A Sunday Sandwich… Egg Salad Sandwich

*A healthy spin on the traditional Egg salad sandwich, and easy for a weekend lunch. This is actually a weight watchers meal and when you pair it with two slices of high fiber bread is only 4 points. Or 91 calories before bread.
4 Tbsp. low fat mayo
1 Tbsp. chopped parsley, dill or chives ( I used chives)
1 tsp. Mustard
¼ tsp. salt
1/8 tsp. pepper
2 large hard- cooked eggs, peeled and chopped
4 large hard- cooked egg whites, peeled and chopped
½ sm. Green pepper chopped
4 romaine lettuce leaves
1 Boil eggs on high heat (12-15 mins)

2 Meanwhile mix the mayo, green onion, mustard, salt, and pepper in a bowl.

3 Stir in the eggs, eggs whites, and bell pepper until blended.

4 Serve with lettuce ( I also threw some bacon on ours, we love that already cooked bacon).
