Gnocchi Florentine

Serves 4
This is one of my favorite go-to ground beef meals. Gnocchi can be found in the pasta aisle of your super market.

1 (17 ½ oz) package gnocchi
1 onion, chopped
3 garlic cloves, chopped
1 tsp. dried Italian seasoning
½ lb. ground extra lean beef
1 2/3 c. marinara sauce
½ tsp. black pepper
4 tsp. parmesan cheese

1 Cook the gnocchi according to package directions
2 Spray a large non stick skillet with cooking spray and set over medium high heat. Add the onion, garlic, and seasoning; cook stirring occasionally until the onion is slightly softened, about 3 mins. Add the beef and brown. Stir in the marinara sauce and pepper; bring to a boil. Reduce the heat; cover and simmer until heated through, about 2 mins.

3 Drain the gnocchi; add to meat mixture, stirring until blended. Cook uncovered, until gnocchi absorbs some of the sauce, about 2 mins. Serve sprinkled with parmesan.
