Chorizo-Topped Mexican Pizzas

Serves 4
8 oz. chorizo sausage
1 c. deli fresh chunky salsa with corns and beans ( My grocer didn’t have this so I just added canned beans and corn to my salsa)
Non stick cooking spray
4 flour tortillas
1 c. shredded Mexican cheese blend
1 avacado, halved pitted and sliced
4 green onions
lime wedges
(optional: fresh cilantro)

1 Preheat broiler. In a large skillet crumbe and cook churizo over med. Heat until no pink remains. Drain. In a small sauce pan heat salsa until heated through.

2 Lightly coat large baking sheet with cooking spray, arrange tortillas two at a time or use two pans for all four. Top each with cheese, salsa, cooked chorizo and heat 2-3 mins

3 Top with avacado, green onions and cilantro. Pass lime wedges.
